The good news?  With a few simple steps, you can make silky, lump-free gravy without the stress:

  1. Collect the roasting juices — Once your turkey’s out of the oven, pour all those lovely juices from the roasting tin into a jug or bowl.
  2. Skim off the fat — Use a spoon to remove any excess fat from the surface so your gravy stays rich, not greasy.
