Slow Cooker Chilli Con Carne

Ingredients

  • brown onion, diced 
  • red pepper, diced 
  • 3 cloves garlic, crushed 
  • 2 tsp smoked paprika 
  • 1 tsp cayenne pepper or chilli powder 
  • 1 tsp oregano 
  • 2 tsp ground cumin 
  • 2 x 400g tins chopped tomatoes 
  • 500ml beef stock 
  • 500g beef mince 
  • 2 x 400g tins kidney beans 

Top tip!

Serve with soured cream or yoghurt, salsa and guacamole, grated cheese and tortilla chips

Method

  1. Start by browning the mince in the slow cooker with a little oil.
  2. Set the cooker to low and add the diced onion, pepper and crushed garlic to the slow cooker.
  3. Stir in the tinned tomatoes and stock then stir in all the spices. Stir all the ingredients together and cover with the lid.
  4. Cook for 6-8 hours on low heat or 3-4 hours on high.
  5. Stir in the kidney beans during the last 20 minutes of cooking.
  6. Serve the chilli con carne with a bowl of rice and top with your favourite toppings.
