Air Fryer Summer Berry Sponge Cake

In Celebration of the Coronation, bake a classic Victoria Sponge in an Air Fryer and decorate in around 15 minutes.

 

The countdown to the Coronation of King Charles III is certainly on. Ahead of the big event, specialist retailer Lakeland has joined in on the fun and launched a celebratory centrepiece aka Heir (Fryer) to the Throne Cake, which has been made using the hottest bit of kitchen kit – the Air Fryer.

 

It’s really easy to make. Simply use a traditional Victoria sponge cake recipe and then decorate with a vanilla butter cream and top with berries to form a Union Jack design.

 

With over 300M searches for Coronation on TikTok, Baking Influencer Hari Beavis (@HariBeavis / 600K followers) couldn’t wait to get creating her majestic masterpiece using the Lakeland Digital Crisp Air Fryer and cake tin.

Air Fryer Coronation Cake Recipe:

 

Ingredients

 

• 200 Grams Butter
• 200 Grams Caster Sugar
• 3 Eggs
• 1 Tsp Vanilla Extract
• 225 Grams Self Raising Flour
• Decoration Double Cream Strawberry
• Conserve Strawberries and Blueberries

 

Method

 

1. Start by creaming together your butter and your sugar. Once this is light fluffy individually add in your fresh eggs, mixing after each one.
2. When this is all combined fold in your flour and then drizzle your vanilla extract. While you pour the batter into your greased tin turn the Air Fryer on and by the time the cake batter is in the tin, your Air Fryer will be ready.
3. Pop it in gently and click the cake setting cooking for around 15 minutes (if it does need an extra 5 minutes you can cover the top with tinfoil to avoid it going too crispy, but that is personal preference). In those quick 15 minutes you have time to do the washing up and whip up your double cream.
4. When the cake is out and cool, layer the cream and then strawberry conserve and do the same with the next layer but rather than the conserve decorate in fresh strawberries and blueberries and get your patriotic napkins out.
