Spiced Butternut Squash & Sweet Potato Soup

Ingredients

  • Butternut squash, peeled and cut into chunks 
  • White onion, roughly chopped 
  • Carrots, chopped 
  • Large sweet potato, peeled and chopped 
  • tbsp Tikka paste 
  • litre Vegetable stock 
  • Salt & pepper, to taste 

Method

  1. Prepare all vegetables by peeling (if needed) and cutting into even-sized chunks — this helps everything cook evenly.
  2. Add the butternut squash, onion, carrots, and sweet potato to the soup maker.
  3. Spoon in the tikka paste and pour over the vegetable stock.
  4. Season with salt and pepper.
  5. Place the lid on and select the Boil setting (depending on your model).
  6. Once the cycle is complete, use the Blend/Pulse function until the soup is smooth and creamy.
  7. Adjust seasoning if needed and serve hot.
