Bubble and Squeak with Fried Egg

Ingredients

  • 1 tbsp Chilli oil 
  • 20g Butter 
  • 1 Sprig thyme 
  • 2–3 Pigs in blankets 
  • Leftover carrots, parsnips, and potatoes 
  • 1 Egg 
  • Salt and pepper 

Method

  1. Heat chilli oil, butter, and thyme in a pan.
  2. Chop pigs in blankets and add to pan.
  3. Add chopped leftover veg, fry until golden and crispy.
  4. Season with salt and pepper.
  5. Serve topped with a fried or poached egg.
