Ingredients
- 1 medium onion, roughly chopped
- 2 garlic cloves, crushed or finely chopped
- 1 medium potato, peeled and cut into 1cm chunks
- 150 g broccoli florets
- 150 g frozen peas
- 100 g fresh spinach
- ½ tsp dried tarragon (add double if using fresh)
- 900 ml vegetable stock
- Salt & black pepper, to taste
- 1 tsp Nigella seeds
- 30 g Feta cheese, crumbled
- 2 tbsp Extra virgin olive oil
Method

Roughly chop the onion, peel and dice the potato into small 1cm pieces, and break the broccoli into florets.

Place the onion, garlic, potato, broccoli, peas, spinach and dried tarragon into the jug. Pour in the vegetable stock, ensuring the liquid sits between the MIN and MAX lines.

Attach the lid and select the Smooth setting. The machine will cook and automatically blend the soup to a velvety consistency once the cycle completes.

When finished, check the seasoning and add salt and black pepper if needed. Ladle into bowls and sprinkle over the nigella seeds, crumble over the feta cheese, and finish with a drizzle of extra virgin olive oil for a silky, nourishing touch.
