Pulled Beef Tacos with Pickled Cabbage

The perfect combination of flavours, spiced-up, succulent slow-cooked beef meets the tang of pickled cabbage, the creaminess of feta cheese and the freshness of coriander and lime.

Ingredients

  • For the pulled beef
  • 900g (2lb) flank or sirloin steak 
  • 2 tsp garlic powder 
  • 2 tsp smoked paprika 
  • 2 tsp onion powder 
  • 2 tsp salt 
  • 1 tsp black pepper 
  • 2 tsp cumin 
  • 2 tsp chilli powder 
  • 1 tsp chilli flakes 
  • 330ml bottle of light beer or beef stock 
  • juice of lime 
  • To serve
  • 1 pack tortillas 
  • 1 jar pickled cabbage 
  • A portion feta cheese 
  • A portion fresh coriander 
  • A portion fresh limes cut into wedges

Method

  1. Mix together all of the spices and rub over the meat. Put into a slow cooker and pour over the beer/stock and lime juice. Cook for 5-6 hours on Low or 4 hours on High.
  2. To serve, add some of the slow-cooked steak to the tortillas, top with a spoonful of pickled cabbage, crumbled feta, a sprinkling of fresh coriander and lime wedges.
