Elevate your jacket potatoes with this delicious recipe – bringing together sweet caramelised red onions and smoky bacon. We use the Lakeland 3 in 1 Air Fryer Microwave to achieve the perfect baked potato.
Ingredients
- 1 baking potato
- 2 rashers streaky bacon diced
- 1 red onion thinly sliced
- 25g cheddar cheese grated
- 2 teaspoons brown sugar
- 1 tablespoon balsamic vinegar
- 1 sprig fresh thyme (optional)
Top tip!
If you prefer your baked potatoes buttery, add a small knob of butter before filling with toppings!
Method

Scrub the potato and pat dry.

Rub the potato with olive oil and season well with salt and pepper, before piercing a few times with a fork.

Put the potato on a tray and place into the air fryer, setting the microwave function on high for 8-10 minutes.

Then, set the air fryer function at 200℃ for 15-20 minutes, turning the potato throughout.

Meanwhile, prepare your toppings - heat a small drizzle of oil in a frying pan and add the diced bacon. Cook until brown and crispy and then remove from the pan.

Then, add the sliced red onion to the leftover warmed bacon fat in the pan and fry slowly on a low heat, stirring occasionally to ensure they don't burn.

Once the onions are soft and golden brown (this takes approximately 15-20 minutes), add the brown sugar and balsamic vinegar into the pan and mix well.

Keep cooking the onions for around 5 more minutes, until sticky and caramelised.

Add the cooked bacon back into the pan with the onions and mix well.

Half the baked potato and add even amounts of the caramelised red onion and bacon mixture on both sides. Then, sprinkle over the grated cheese and return to the air fryer for 2 minutes, or until melted.

Serve with an optional garnish of fresh thyme.
