Perfect Carrots

Ingredients

  • 8 medium-sized carrots 
  • 6 star anise 
  • 80g sugar 
  • 30g salt 

Method

  1. Peel the carrots and remove the green leafy tops if still attached.
  2. Add the carrots to your Only Pan.
  3. Pour in the sugar, salt, and star anise.
  4. Cover the carrots with water and cook over a medium heat for 25-30 minutes, or until tender.
  5. Lift the carrots out of the Only Pan and turn up the heat to reduce the cooking liquid.
  6. Once it has reduced to a honey-like syrup, remove from the heat and pour over the carrots to serve.
