Cranberry and Orange Sauce

Ingredients

  • 300g fresh cranberries 
  • zest and juice of orange 
  • 120g caster sugar 
  • 2 tbsp cointreau (optional) 

Method

  1. Place all of the ingredients into an ovenproof pan or casserole with a well fitting lid and cook alongside the tart case for a total of 25-30 minutes or until the fruits are softened.
  2. Take from the oven, mash roughly with a fork then transfer to a pot or jar to save until Christmas. Makes a great Christmas gift.
  3. Alternatively, the sauce can be made on the hob (simmer until fruits soften but be careful it doesn’t burn) or in the microwave for about 5 minutes on High power.
