Ingredients
- 120g chorizo
- 1 tsp olive oil
- 6 leftover cooked new potatoes
- 1 red chilli
- 1 bunch spring onions, chopped
- A handful of fresh coriander
- 1 tsp sherry vinegar
- 2 free-range eggs
- Freshly ground black pepper
Method

Place your Only Pan over a medium heat.

Finely chop the chorizo into small pieces and add it to the pan with the olive oil.

Cook the chorizo for 3-5 minutes, allowing it to release its oils and flavour.

Add the cooked potatoes, gently squashing them to open them up—this helps them crisp up beautifully and soak up all that delicious chorizo flavour.

Add the chopped chilli and continue cooking until the potatoes are golden and crisp.

Splash in the sherry vinegar and toss everything together.

Scatter over the chopped spring onions and coriander.

Serve topped with two perfectly fried free-range eggs and a twist of black pepper.
