Chocolate Brownie Waffles

Made using the Lakeland No Mess Electric Waffle Maker
Ingredients
- For the waffles
- 150g plain flour
- 100g caster sugar
- 50g cocoa powder
- 1 1/2 tsp baking powder
- 1 1/2 tsp bicarbonate of soda
- 250ml milk
- 1 egg beaten
- 70g butter melted
- 75g chocolate chips
- 25g pecans finely chopped
- a little vegetable oil for greasing
- For the strawberry compote
- 200g strawberries hulled and halved
- 2 tbsp caster sugar
- To serve
- 200g strawberries
- A handful fresh mint leaves
Method

Sift the flour into a mixing bowl, and mix in the sugar, cocoa, baking powder and bicarbonate of soda. In another bowl, whisk together the milk, egg and butter, then add to the dry ingredients and mix well. Stir in the chocolate chips and pecans, then leave to stand for 5 minutes.

Heat the waffle maker and lightly brush the cooking plates with oil. Pour a ladleful of batter into the centre of each plate, ensuring it spreads to the corners. Cook for 2-3 minutes. Repeat with the remaining batter until you have 8 waffles, lightly greasing the cooking plates each time.

To make the compote, cook the strawberries and sugar in a small pan over a gentle heat until soft and syrupy.

Serve the waffles with the compote, fresh strawberries and mint.
