What is a carving knife? A carving knife – also called a meat carver or a carvery knife – is a kitchen knife with a long, thin blade with a pointed tip. Carving knives tend to be as long, or longer than chef’s knives, and with blades that are narrower. They also usually have sharp, straight blades, rather than serrated edges, although there are exceptions.
