If you’ve always wanted to have a go at making your own delicious sauerkraut or kimchi but are unsure where to start, fear not – this special 1 litre glass fermentation jar with air release valve is all the equipment you need to begin fermenting at home.

Air Release Valve

There’s no messing around with muslin cloths or remembering to 'burp' your jar as the airtight lid features a special one-way valve that allows built-up gas from the fermenting process to escape automatically, so there’ll be no explosive situations, while also preventing contamination from outside, which can make your food go mouldy.

Ideal for Sauerkraut

To make a basic sauerkraut that’s a world away from the stuff you find in supermarkets, all you need is cabbage and salt. Simply shred the cabbage and massage the salt into it until the cabbage goes soft and starts to produce a natural brining liquid. About five to ten minutes should do it and it’s really quite therapeutic. Add some caraway seeds for extra flavour, if you like, then put everything in this wide-mouthed fermentation and preserving jar, top up with water until the cabbage is covered, weigh it down with a cling-film-covered ramekin filled with baking beans and put the lid on. That’s it.

After about three days, it will be ready to eat, but the longer you leave it, the more the tangy flavour develops. When you’ve got the flavour just right, put the jar in the fridge to halt the fermenting process. It will keep for ages.

What Else Can I Make?

As well as cabbage sauerkraut, you can experiment with other vegetables to make different flavoured sauerkraut – celery and dill, beetroot and juniper, ginger and carrot… the possibilities are endless.

You can also make kimchi to accompany Asian dishes, or try kombucha – a fizzy black tea. Ideal for preserving pickles and chutneys, too, it can also be used to make kefir or hold your sourdough starter.

Fermentation is one of the oldest techniques for preserving and storing food. When you combine your vegetables with salt and store them in an airtight container, the naturally present beneficial bacteria transform your food into a natural probiotic.

"inadequate instructions"

Don't get me wrong, this is probably a great product if you know how to use it properly but if you don't know, you won't find out, (unless you want to make kimchi). No instructions, no videos, no accompanying book or booklet, just a lot of mouldy food. Is this too much to ask? As I don't know how to use them for fermentation, they're now very expensive storage jars.

"Great for fermenting but hard to remove sealing disc smell"

The fermenting worked beautifully, but I am unable to remove the powerful Kimchi smell from the lid's rubber seal by hand washing with washing up products. I hope Lakeland can help with this since the product is not dishwasher safe and I don't know what to do.

It is sometime possible for products made with platinum silicone to become impregnated with certain odours. This could be due to any of the following reasons: •Food has been cooked which has a pungent flavour or has been seasoned with a pungent odour which has seeped into the silicone due to its porosity. This, however, does not affect the product, nor the properties of the material. We tested three cleaning tips to eliminate any odour and / or taste of silicone: 1.Pour water with slices of lemon inside the product and heat in the microwave for 5 min at 600W. Once the product is heated, remove the water and scrub the sides with lemon, then rinse. 2.Heat 50 ml of milk in the product for 1 minute at 600W. Once heated, stir the milk with a spoon scraping the walls of the product. Remove and clean. 3.Hand wash with warm water and no soap, then fill with water, bicarbonate of soda and lemon slices and place in the oven at 200 °C

"Difficult to keep sauerkraut / kimchi below fluid"

Purchased for making sauerkraut. Ramekin as suggested won’t fit in the narrow neck so I’ve resorted to using sterilised stones from the beach.

"Fermentation jar"

First ever use of this jar, having previously used a DIY method. Very impressed and first Kimchi is looking good. I would love it if Lakeland would stock the smaller size of jar- .5 L. I have cut a plastic disc to fit in side so that the ramekin can press down the whole area, to keep everything under the pickle.

This is brilliant, makes very good sauerkraut and fits in the fridge. Easy to use. I have also bought this jar for my daughter and she too enjoys using this product
