A clever dual-purpose International Knife Sharpener, created by our knife sharpening experts to help you keep all your knives in tip-top condition, so you’re covered if you have a favourite Japanese or Asian knife for veg prep, but prefer European knives for filleting or carving.

How it Works

Two pairs of V-shaped notches, set at precise angles to suit either European-style knives or more acutely angled Japanese blades, let you sharpen blunt blades and then hone them to perfection, and a sliding protective cover makes it clear which pair of slots to use.

Two-step Sharpening Process

To sharpen a dull knife, draw the blade edge from heel to tip through the relevant coarse sharpener 8-10 times – we recommend doing this once or twice a month to maintain a sharp edge. To hone a blade to its finest edge, draw the blade using the same action a few times through the fine ceramic rollers in the same set.

"Not impressed"

Easy to use but the knives are not as sharp as I would like. Difficult to cut a sheet of paper with them. I get better result with an old fashioned steel or carborundum stone.

Thank you for your review. We’re sorry this hasn’t worked for you and we’ve sent you an email. This knife sharpeners isn’t suitable for sharpening serrated blades or scissors. It is for keeping your knife blades edges in shape not for putting a new on your knife when completely blunt. A steel or sharpening stone will will be better for putting a new edge on your knife and taking off a little steel. This is best for upkeep best used frequently.

I bought this to sharpen my Japanese knives, as my steel wasn't sharpening them well. Although the sharpener has created a sharper edge, it's not as sharp as I hoped. Not sure what the solution is for sharpening these knives.

Please not this item is suitable for European knives with a 20º angle & Japanese knives with a 15º angle. Not suitable for sharpening serrated blades or scissors.

"Easy to Use for my new Robert Welch Knives"

I recently purchased several Robert Welch knives and I was going to purchase a Robert Welch sharpener to go with them until I read the reviews to compare which seem to favour this one I like this sharpener as it's easy to use, doesn't slide about and with clear instructions with it There is a choice of settings either 'Fine or Coarse' and 'Japanese or EU' I now use the 'Fine' setting after every few times of use, so the knife blade stays permanently sharp It's important to know which cutting angle to use 'Japanese or EU' as some knives are not clearly marked
