"The Bible for home canning lovers"

star star star star star

Great to see this book available and in UK measurements. Lovely recipes for water bath canning and pressure canning. I would be lost without this book and it explains the what and why perfectly for each tasty recipe. Such a good price too and is the cheapest that I've found out there on tinterweb. It's good to be able to preserve more than just fruits, pickles and jams and know that it's being canned safely. Love this book.

"Comprehensive book.....but......"

The techniques used in the book are canning, or the pressure method, neither of which I've used before so that was a bit disconcerting, especially as there are warnings about changing the techniques used! I'm a sterilise the jars-boil the lids-top with wax paper-kind of girl, so hopefully the jam and chutney recipes will work ok with that method. Pickling salt is a listed ingredient in chutnies which isn't available in supermarkets (it's on Amazon but pricy); perhaps Lakeland could stock it. I read kosher salt can be used but that's altering the recipes; there are warnings about that too!
