There are plenty of hit-and-miss ways to prove bread dough. Sticking it in the airing cupboard. Putting it by a radiator (or one of our heated airers). Turning your bottom oven on very low and putting it in the top oven. But this Folding Bread Proofer does the job expertly, heating anything you put inside it to a gentle, consistent, easily controlled temperature, so you can bring out the best possible flavour in your loaves.

And it’s not just for the bread bakers. Anyone who makes their own yoghurt, or kefir or kombucha, or handcrafted chocolates should take a closer look too, as it’s also perfect for helping to grow cultures and tempering chocolate. You can even use it for slow cooking, turning out tender, succulent, mouth-watering one-pot meals.

What you get

  • Folding bread proofer – with expanding box section that folds down for storage, easy-to-use control panel to set temperatures from 21˚C to 49°C in the proofing modes and 30°C to 90°C in the slow cooking mode, base heating element, thermostat to keep temperatures within a narrow range, and hinged lid with clear viewing window.
  • Stainless steel wire rack – for resting loaves and fermented foods on.
  • Water tray – fill with water to prove bread dough.

Proves bread dough

Select a low setting for a long, slow rise or pre-fermentation, or turn up the heat to give yeast a boost on a cold day, or to prove sourdough or rye loaves. There’s a water tray to increase the humidity to help out, and you can even keep an eye on your expanding loaf through the viewing window (because we all know how satisfying that is!). There’s room to prove two large (1kg/2lb) loaves at once, so it’s ideal if your family get through a lot of home-made bread.

Helps with fermenting and growing cultures

Yoghurt, kefir, kombucha, sour cream, crème fraîche – if fermented foods are your thing, this will get the job done expertly, helping to grow cultures safely and efficiently. Just remove the water tray and place containers on the rack above the heating plate.

Works as a slow cooker and tempers chocolate too

We love slow-cooked food for its melt-in-the-mouth flavours, and if you don’t have a separate slow cooker, this is a great substitute. Remove the water tray and the rack, pop your meal in a covered pot and place it inside for succulent, tender results. You can use it to make black garlic, for sous vide cooking, and it works like a dream at melting and tempering chocolate for the silkiest, shiniest finish.

Easy to assemble and store

The design is really ingenious. Just open up the lid, pull out and click the central box section into place, then replace the lid on top. It’s ready to use in seconds, and just as easy to fold away when you’re done. And when it’s folded it’s just 8cm deep, so is easy to store – the rack and water tray cleverly fit inside even when it’s folded, so you don’t have to find somewhere else for them.

"This is super"

I wish I’d known earlier that Lakeland stocked this! I’ve had so many “fails” with proving my bread but that has all changed now! Christened my new Proofer today and am delighted with it. I shall be trying the recipes supplied and I’m sure I’ll be ordering the extra shelf from Brod & Taylor. I agree with the other reviewer that Lakeland should be offering this - either included with the original order or as an extra. This is one of the best of many things I have bought from Lakeland over the years.

I make a batch of a dozen rolls (every twelve days, obviously) and they always rise beautifully in this proofer. I mix the dough in my bread machine then prove them in this. My only quibble is that, as it comes, it only has room for a tray of six rolls. I had to buy an extra rack that sits on top of the standard one to make up the twelve. This from the manufacturer. I would have thought that Lakeland should offer this. John

"I have the early version"

I am still using the early version, its a sure way to proof bread properly. I did croissants today. I don`t make as much bread these days but would never downsize this excellent device. The only downside is that three of the rubber feet fell off, no idea when, one is permanently lost. I have just ordered some more from Brod and Taylor. Cost me £11 and tbh they should never fall off but still worth the 5 star rating

I have been thinking about buying this for a few months, I felt as though I couldn’t justify the high price, anyway after way to many attempts to get my bread rolls etc to rise in a cold kitchen in the time frame I wanted I decided to buy. I am so glad I did as I made some burger buns at the weekend which uses plain flour but there wasn’t any way these were going to rise in my cold kitchen, the end results were perfect I won’t be buying stodgy buns anymore.

I use this prover for soooo many things such as sourdough starter, bread and bread rolls, sprouting, kimchee making…… One of the best kitchen gadgets out there.
