Having not made quiche in several years because my mother-in-law broke my ceramic dish, I finally bought the perforated metal tin. It is utterly fantastic and we've had quiche 6 times since we bought it. It is wonderful!

I bought the smallest tin a few years ago and it was so good I have just bought the largest tin for when the family visit. I usually blind bake my pastry shells with baking beans then remove the beans, brush the pastry with a little beaten egg and put them back in the oven for another five or six minutes to finish off cooking. I've never had a problem with leaking. I also always place the flan tin on a baking tray to make it easier to move in and out of the oven. Also great to use with filo pastry sheets to make the shell, fill with pie mixture and rumple the over hanging filo sheets on top.
Tried today for the first time, didn't blind bake while making a quiche ( just milk eggs & onions ) & was worried about leaking. Looked like a pro baker, tasted not so great due to my over seasoning! Live n learn! Excellent product, looking forward to new experiments!
I've been making quiches for years and this is the first product that consistently bakes with a crisp pastry case and no leaks - I would thoroughly recommend it and I will be buying the smaller versions as well.
I bought this for my son in law, (he is a chef) and he told me this was a super tin for baking pastry no more soft bottoms, he recommends this for all homes bakers.
