
Cranberry and Orange Budget Pudding

Any leftover cranberry sauce can be used to make this delicious family winter warmer. I have called this my budget pudding – the ingredients costing about £1 and the energy cost about 5 pence if cooked in the microwave.
You will need a 1lb Pudding basin greased or brushed with lining paste with paper disc in the base
Ingredients
- 100g soft butter or margarine
- 100g sugar
- 120g self-raising flour
- 1 grated zest of an orange
- 3 tbsp milk
- 1 egg
- 3 tbsp leftover cranberry sauce
Top tip!
Serve hot with custard or cream. Any leftovers can be reheated the next day again in the microwave and it is just as light and lovely.
Method

Place the paper disc in the base of the basin and top off with 3 tbsp cranberry sauce

In a medium mixing bowl add the butter, sugar, flour, orange zest, milk and egg and whisk together until thick and smooth.

Spoon over the cranberry sauce in the base, smooth with the back of a spoon, cover with a plate and microwave on High power (1000w for 3 minutes) and 5 minutes for 800w machine.

Leave to stand for one minute then turn out onto the plate that was used to cover the bowl.
