Marmite Roast Potatoes

Roast potatoes are a Christmas must-have, and this Marmite twist makes them truly unforgettable. Salty, savoury, and crisp, they’re the perfect sidekick for your turkey and trimmings. Make ahead for less stress on the big day, then roast to perfection with garlic, rosemary, and that secret splash of Marmite.
Ingredients
- 2.5kg Medium floury potatoes (Maris Piper are ideal)
- 6 tbsp Goose fat
- 1–2 tbsp Marmite
- 1 Garlic bulb
- 3 tbsp Fresh Rosemary
Method

Peel and cut the potatoes into even chunks. Boil for 10 minutes, then drain.

Shake in a colander to rough up the edges. Leave to steam dry for 20 minutes.

Chill overnight (or freeze ahead).

Heat goose fat in a roasting tray at 180°C for 15 minutes.

Add garlic and rosemary, then toss potatoes in the hot fat. Roast for 45 minutes.

Drizzle with Marmite, return to the oven for 15 minutes, then serve.
