Ingredients
- For the dough
- 300ml cold water
- 1 tsp fine salt
- 7g fresh yeast
- 500g “00” flour plus extra to dust
- 2 tbsp extra virgin olive oil
- For the pizza
- 250g classic pizza dough
- 200g mozzarella cheese 100g for stuffing, 100g for topping
- 4 tbsp pizza sauce
- 2 tbsp pitted green olives halved
- 4-5 tinned anchovies
- 2 tbsp Parmesan cheese grated
- A portion Fresh basil leaves
- A small amount olive oil
- A small amount flour for dusting
- A pinch salt and pepper to taste
Method

Bring the water up to a lukewarm temperature, then whisk in the salt and yeast.

Stir the flour and yeast mixture in a large bowl using a wooden spoon. Continue mixing by hand until the dough comes together in a ball. Turn out your dough ball onto a lightly floured surface and knead with both hands for about 10 minutes, until it is firm and stretchy. Return the dough to the bowl. Cover with cling film and leave to rise in a warm place for 1-2 hours.

You’re looking for your dough to roughly double in size before you divide it up. Make 2-3 equal dough balls and place in a separate bowl or baking sheet lined tray, cover with plastic wrap and leave to rise for another 20 minutes.

Prepare your pizza dough ahead of time with the recipe above or using Ooni’s Classic Pizza Dough recipe. If you’re after a quicker solution, then Ooni’s Neapolitan Pizza Dough Mix just needs water and a short kneading to create crispy, fluffy dough.

Using a small amount of flour, dust your Lakeland Pizza Peel. Stretch the pizza dough ball out to 14 inches. Lay out thin strips of mozzarella cheese around the edge of the dough, then fold the dough over the cheese and press down to seal the edges, creating a luxurious string cheese stuffed crust.

Fire up your outdoor pizza oven! The pizza stone within should be at 500˚C before you slide your dough on. You can check the temperature inside your oven quickly and easily using one of our infrared cooking thermometers.

Spread the pizza sauce evenly across the centre of the pizza dough base, leaving the edge of the pizza uncovered. Top with the remaining mozzarella cheese. Add your olives and anchovies, then sprinkle the grated Parmesan cheese over the top. Add a few fresh basil leaves and a drizzle of olive oil. Season with salt and pepper.

Slide the pizza off the peel and onto your pizza stone. Make sure to rotate the pizza regularly while it cooks, until the whole crust is beautifully brown.

Once cooked, remove your homemade stuffed crust pizza from the oven. Feel free to add a few more fresh basil leaves for garnish, then slice it like a pro with our rocker pizza cutter and serve straight away!
