Golden Cauliflower Cheese

No Christmas table is complete without a bubbling, golden cauliflower cheese. This version combines roasted florets with a creamy, nutmeg-spiced sauce and plenty of melted cheddar. Comforting, indulgent, and just as good prepped ahead, it’s the perfect partner for roast turkey, gammon, or even as a stand-alone veggie dish.

Ingredients

  • 1 large (or 2 small) Cauliflower 
  • 2 tbsp Olive oil 
  • For the Sauce
  • 50g  Butter 
  • 4 tbsp Plain flour 
  • ½  Nutmeg, grated 
  • 1 tbsp Dijon mustard 
  • 500ml  Milk 
  • 100g  Mature cheddar cheese, grated 

Method

  1. Cut cauliflower into florets, drizzle with olive oil, and roast at 180°C for 20 minutes.
  2. Cool, then chill overnight or freeze if prepping ahead.
  3. For the sauce: melt butter, stir in flour to make a paste, cook for 1 minute.
  4. Gradually whisk in milk until smooth.
  5. Add nutmeg, mustard, and half the cheese. Stir until melted.
  6. Place cauliflower in a dish, pour over sauce, top with remaining cheese, and bake for 30 minutes at 180°C until golden and bubbling.
