Golden Cauliflower Cheese

No Christmas table is complete without a bubbling, golden cauliflower cheese. This version combines roasted florets with a creamy, nutmeg-spiced sauce and plenty of melted cheddar. Comforting, indulgent, and just as good prepped ahead, it’s the perfect partner for roast turkey, gammon, or even as a stand-alone veggie dish.
Ingredients
- 1 large (or 2 small) Cauliflower
- 2 tbsp Olive oil
- For the Sauce
- 50g Butter
- 4 tbsp Plain flour
- ½ Nutmeg, grated
- 1 tbsp Dijon mustard
- 500ml Milk
- 100g Mature cheddar cheese, grated
Method

Cut cauliflower into florets, drizzle with olive oil, and roast at 180°C for 20 minutes.

Cool, then chill overnight or freeze if prepping ahead.

For the sauce: melt butter, stir in flour to make a paste, cook for 1 minute.

Gradually whisk in milk until smooth.

Add nutmeg, mustard, and half the cheese. Stir until melted.

Place cauliflower in a dish, pour over sauce, top with remaining cheese, and bake for 30 minutes at 180°C until golden and bubbling.
