Get Ahead Chicken Wing Gravy

This rich, deeply flavoured gravy is the ultimate stress-saver for Christmas Day. Made with roasted chicken wings, vegetables, herbs, and a splash of festive wine, it can be cooked well in advance, frozen, and reheated to perfection. Come Christmas, you’ll have one less job and one incredible gravy.
Ingredients
- 1kg Chicken wings
- Salt and pepper
- 2 Onions
- 4 Celery sticks
- 4 Carrots
- 1 Sprig of thyme
- 1 Bay leaf
- 1 Sprig sage
- 200ml Red wine
- 2 pints Chicken stock
- 1 tbsp Mincemeat or cranberry sauce
- 2–3 tbsp Cornflour, mixed with 2 tbsp water
- 25g Butter
Method

Roast chicken wings at 200°C for 1 hour until golden brown.

Place chopped veg, herbs, wings, and mincemeat/cranberry in slow cooker.

Pour in wine and stock, cook 6 hours or overnight.

Strain into a saucepan, boil, then stir in cornflour slurry and butter.

Cool and store in fridge or freezer until Christmas Day.
