Fluffy Spelt Pancakes

Made using a swift flat griddle pan.
Ingredients
- 100g spelt flour
- 2 tsp baking powder
- pinch of salt
- 1 tsp caster sugar
- 1 egg
- 150ml nut milk
- a little oil for greasing
Method

Sift the flour into a mixing bowl and mix in the baking powder, salt and sugar. In another bowl, whisk together the egg and milk, then add to the flour and stir until you have a smooth batter. Leave to rest for 15 minutes.

Heat the griddle pan and lightly brush with oil. Add 4 tablespoons of the batter, leaving a space between each, and cook until firm. Turn over and cook for 2-3 minutes until golden. Repeat with the remaining batter until you have 8 pancakes.

Serve with eggs and bacon.

Tip: These pancakes are best eaten freshly made. Fruits such as blueberries or raisins can be added to the batter to make a sweet version. The nut milk can also be swapped for coconut milk or another milk of your choice.
