Crispy Hash Brown Bites

These bite-sized beauties are a brilliant Christmas canapé. Crispy hash brown tartlets filled with silky mustard hollandaise, topped with Parma ham and fresh cress. They’re fun to make, easy to batch prep, and guaranteed to disappear fast at any festive gathering. A clever twist on breakfast, perfect for party season.
Ingredients
- 6 Frozen hash browns, thawed
- 4 Egg yolks
- 1 tsp Dijon mustard
- 125g Salted butter
- 4 slices Parma ham
- Use mustard cress for a garnish
Method

Whisk egg yolks and mustard over a pan of simmering water.

Gradually add butter chunks, whisking until thickened into hollandaise. Chill.

Bake Parma ham slices at 170°C until crisp, then cool.

Break hash browns into chunks, press into a mini morsel tray, bake 15–20 minutes until crisp.

Press down centres to form tartlets, then fill with hollandaise.

Crumble Parma ham on top and garnish with cress.
