
Coronation Strawberry Shortbread Towers

If you think your guests will want something a little different, here’s a recipe for strawberry shortbread towers. This combines the King’s fondness for fresh fruits with his love of Scottish shortbread. We think he’d approve of this one.
Ingredients
- A packet Buttery Shortbread Rounds
- 2 punnets of fresh strawberries
- 1 tbsp caster sugar
- Squeeze of Lemon Juice
- 300ml double cream
- A dash of vanilla extract
- A dusting of icing sugar
Method

Pour the double cream into a bowl with a few drops of vanilla extract. Whip until stiff peaks start to form. Transfer the bowl to the fridge

Chop half the strawberries into thin slices from bottom to top.

Blitz the other half of the strawberries in a food processer with the lemon and sugar. Sieve the purée to catch the seeds.

Carefully marble this purée through the cream. Spoon out a dollop of your mixture into the middle of your shortbreads, keeping half the biscuits aside.

Finally, arrange the strawberry slices around the cream filling – as if the strawberries are holding the filling in. Then top this off with another shortcake biscuit and the tower is formed! Dust with icing sugar and enjoy. These treats are perfect with tea or prosecco.
