Clementine and Nutmeg Butter

The clementine zest and freshly grated nutmeg lift your turkey with a fragrant sweetness, making it a brilliant alternative to traditional butters. Ingredients
- 250g Softened butter
- ½ Nutmeg
- 3 Clementines
Method

Place the softened butter in a bowl. Grate the nutmeg directly over the butter.

Add the clementine zest. (Grate nutmeg first, as zesting the fruit leaves oils on the zester.)

Stir together until combined.

Roll into a cracker with cling film and freeze.

Rub half onto the turkey before roasting.

Melt the remaining butter and brush over before serving.
