Clementine and Nutmeg Butter

The clementine zest and freshly grated nutmeg lift your turkey with a fragrant sweetness, making it a brilliant alternative to traditional butters. Ingredients

  • 250g  Softened butter 
  • ½  Nutmeg 
  • 3  Clementines 

Method

  1. Place the softened butter in a bowl. Grate the nutmeg directly over the butter.
  2. Add the clementine zest. (Grate nutmeg first, as zesting the fruit leaves oils on the zester.)
  3. Stir together until combined.
  4. Roll into a cracker with cling film and freeze.
  5. Rub half onto the turkey before roasting.
  6. Melt the remaining butter and brush over before serving.
