Christmas Tiffin

A no-bake Christmas treat that uses up leftover mince pies in the most delicious way. Packed with cranberries, pistachios, marshmallows, and rich chocolate, these festive tiffin’s are perfect for gifting, snacking, or serving with coffee after dinner. Easy to make, they look as good as they taste.
Ingredients
- 80g Dried cranberries
- 5–6 Mince pies (approx. 300g)
- 85g Pistachios
- 50g Marshmallows
- 2 tbsp Golden syrup
- 150g Dark chocolate, melted
- White chocolate, melted (to drizzle)
- 1 tbsp Dried raspberries
Method

Chop mince pies and place in a bowl with cranberries, pistachios, and marshmallows.

Stir in melted dark chocolate and golden syrup.

Press mixture into mini cake tins. Chill until set.

Drizzle with melted white chocolate and sprinkle with the dried raspberry.

Chill 2 hours or overnight before serving.
