Christmas Leftover Lasagna

Turn Christmas leftovers into something spectacular with this hearty lasagna. Layers of turkey, cauliflower cheese, and pasta, finished with a golden potato and parmesan topping. Comforting, indulgent, and perfect for feeding a crowd, it’s the ultimate Boxing Day dish that makes sure nothing from the feast goes to waste.
Ingredients
- 12 dried Lasagne sheets
- Leftover roast turkey
- Leftover cauliflower cheese
- Leftover roast potatoes
- 1 garlic clove
- 30g parmesan cheese, grated
- For the Sauce
- 50g butter
- 4 tbsp plain flour
- ½ nutmeg
- 1 tbsp Dijon mustard
- 500ml milk
- 100g mature cheddar, grated
Method

Make cheese sauce: melt butter, stir in flour, cook 1 minute. Gradually whisk in milk until smooth. Add nutmeg, mustard, and half the cheese.

Spread 1–2 ladles sauce in dish. Layer pasta, turkey, cauliflower cheese. Repeat, finishing with pasta and sauce.

Toss chopped potatoes with garlic and parmesan, spread on top.

Bake 45 minutes at 170°C until golden and bubbling.
