Bubble and Squeak with Fried Egg

The best part of Christmas is the leftovers, and bubble and squeak is a true Boxing Day classic. Crispy, golden vegetables mixed with pigs in blankets, finished with a fried or poached egg on top. Simple, satisfying, and the perfect way to revive all those festive flavours.
Ingredients
- 1 tbsp Chilli oil
- 20g Butter
- 1 Sprig thyme
- 2–3 Pigs in blankets
- Leftover carrots, parsnips, and potatoes
- 1 Egg
- Salt and pepper
Method

Heat chilli oil, butter, and thyme in a pan.

Chop pigs in blankets and add to pan.

Add chopped leftover veg, fry until golden and crispy.

Season with salt and pepper.

Serve topped with a fried or poached egg.
