Air Fryer Fried Chicken with Corn on the Cob

Ingredients

  • 350g (2 breasts, 4 small thighs) chicken breast or boneless & skinless things sliced into strips or chunks
  • 80g panko breadcrumbs 
  • 4 tbsp plain flour 
  • medium eggs beaten
  • 1 tsp oregano 
  • 1 tsp smoked paprika 
  • 1 tsp garlic granuals 
  • 2 tsp salt and pepper 
  • 1/2 tsp cayene pepper or chilli powder 
  • 10g (small handful) fresh parsley finely chopped
  • 2 large or 4 half sweetcorn cobs 
  • 2 tsp olive oil 
  • Mixed green salad serving suggestion
  • Favourite dips serving suggestion

Top tip!

When coating the chicken, use one hand to dip in the dry coatings (flour and breadcrumbs) and the other hand to coat in the egg. This will keep your hands cleaner.

Method

  1. Preheat your air fryer to 200°c
  2. Slice the chicken into strips and set aside.
  3. Take 3 shallow bowls or plates. Add the beaten eggs to one bowl, the flour to another bowl and the breadcrumbs to the last bowl. Mix all the seasonings together then mix half into the flour and the other half into the breadcrumbs. Coat a chicken strip in the flour, then dip in the beaten egg then coat in the breadcrumbs. Set aside on a clean plate and repeat this with the remaining chicken.
  4. Prepare the corn by washing well in the sink, coat with a little oil and rub with a little salt and pepper.
  5. If using an oil spray, spritz the baskets of the air fryer and add the chicken strips to one of the baskets of the Air Fryer making sure they aren't overlapping each other and have space. Add the sweetcorn cobs to the other baskets. Cook both for 10-15 minutes, turning the chicken and the corn half way through cooking. Cook until crisp and golden, ensuring that the chicken is completely cooked through and piping hot before serving.
  6. Sprinkle both with the freshly chopped parsley and serve alongside your favourite dips and a green salad.
