- Defrost meat and poultry thoroughly before cooking.
- Marinades will tenderise and add flavour to meat and fish, and can be stored in the fridge, even overnight.
- Before cooking, trim fat from steaks and chops and shake off excess marinades to prevent fat flare-ups.
- Keep raw and cooked food separate and don’t handle cooked foods with the same utensils that are being used for raw meat.
- Cooking times will vary depending on the heat of your grill, so use a thermometer fork to make sure you don’t under- or overcook your food.
- Fish cooks beautifully in a foil parcel, just remember to oil the foil first to prevent it sticking.
- When cooking kebabs, always remember to soak wooden skewers in water before use to stop them burning.
