A wide pan that’s sometimes known as a chef’s pan or sauté pan, this 4 Litre Shallow Cast Aluminium Casserole from MasterClass is a truly multi-purpose piece of kit for turning out all sorts of recipes. Very efficient on your hob, its non-stick interior makes it ideal for stir-fries and Spanish omelettes, but if you pop on its self-basting lid and put it into the oven it’ll turn out delicious, melt-in-the-mouth slow-cooked stews, hotpots and cassoulets with no trouble at all. And it’s handsome enough to be presented straight from the oven to guests at the dinner table.
Scratch-proof non-stick
The cool, speckled grey interior is actually a double coating of extra-tough, chemical-free non-stick that needs very little oil – if any – to release whatever you cook inside the pan. Perfect for braising, sautéing or stir-frying meat and vegetables, your cooking can be as heathy as you wish it to be. Incredibly hard-wearing, the coating is the main reason behind this pan’s impressive 25-year guarantee.
Self-basting lid
The interior of the lid is coated with the same non-stick, but what makes it special is the pattern of little ‘nodules’ that encourage any steam to condense back into the pan, basting the contents to keep all the delicious juices and flavours inside. Fantastic. I have cooked casseroles, Spanish omelettes and sir first in this. Also roasted chicken thighs using it like a slow cooker in my oven. Brilliant. Easy to clean too. Beware the handles get very hot.
Decided to try this, it is light and incredibly easy to keep clean. I use it for many different dishes, more than I thought I would and I intend to put the deep dish on my Xmas list.

I am thrilled with this pan, it is a good size for cooking a batch of stew, curry or soup, works brilliantly on the hob and transfers seamlessly to the oven as required. The convection lid does a great job, the non stick seems excellent, very easy to wash up after use. Only downside so far is the handles do get hot on the hob, as does the knob on the lid, which is taking a bit of getting used to. Also, my prevous pan had a glass lid so I could easily see the contents during cooking, but these are small quibbles. I am hoping this pan will be doing sterling service for years to come.
Made my first casserole in this pan, it is good, non stick and a decent size, but had I read the reviews I would not have bought it, the handles are far too hot and this is the down side. My 14 year old granddaughter cooks with me and on my induction hob we need to hold the handle as the pan moves about a bit if not. I would not want her cooking on the hob with this, having to hold the handle with a cloth is not good.I have had similar pans before and no trouble, I will be taking this back and choosing a different pan.
