When it comes to using tofu in recipes at home, it’s not just as simple as buying a block, chopping it up and adding it to your stir fries – unless you’re happy for it to be soggy and tasteless. True tofu aficionados know that to get the best out of your bean curd, you need to remove the water first. This improves the texture, lets your tofu take on the tasty flavour of marinades and dressings, and helps it get that lovely crispy, golden crunch on the outside.

Without a dedicated tofu press, there are all sorts of DIY ways you can try to get water out of tofu… but as anyone who’s tried them can ruefully attest, they generally involve teetering piles of books or cans on top to press the water out, combined with layers and layers of kitchen roll underneath to soak it up. How this 3-part press works

From top to bottom, each cleverly designed piece has its part to play:

• Top press – Acts to compress and squeeze the water out of your tofu, thanks to strong silicone bands on either side that attach to hooks on the base tray – just loop them over the lowest you can, depending on the thickness of your block of tofu.
• Central tofu holder and drainer – Drainage holes in the bottom let water drip into the collecting tray, while the corner feet keep your tofu clear of the water below.
• Base collecting and marinating tray – With hooks on either side for the bands on the top piece to hook over, the white tray at the bottom collects any water pressed out of the tofu, which can be poured away without having to take the press apart.

Versatile design

Three different settings accommodate differently-sized blocks of tofu, and the base tray can also be used to marinate your tofu once pressed.
