Making your own delicious sauerkraut or kimchi at home is surprisingly easy. And our special 1.4 litre glass fermentation jar with an air release valve in the lid will make it even easier – and foolproof – with no other equipment required.

Air Release Valve

There’s no messing around with muslin cloths or remembering to 'burp' your jar as the airtight lid features a special one-way valve that allows built-up gas from the fermenting process to escape automatically, so there’ll be no explosive situations, while also preventing contamination from outside, which can make your food go mouldy.

Ideal for Sauerkraut

To make a basic sauerkraut that’s a world away from the stuff you find in supermarkets, all you need is cabbage and salt. Simply shred the cabbage and massage the salt into it until the cabbage goes soft and starts to produce a natural brining liquid. About five to ten minutes should do it and it’s really quite therapeutic. Add some caraway seeds for extra flavour, if you like, then put everything in this wide-mouthed fermentation and preserving jar, top up with water until the cabbage is covered, weigh it down with a cling-film-covered ramekin filled with baking beans and put the lid on. That’s it.

After about three days, it will be ready to eat, but the longer you leave it, the more the tangy flavour develops. When you’ve got the flavour just right, put the jar in the fridge to halt the fermenting process. It will keep for ages. Our buyer, Veronica, was still enjoying a batch three months after she originally made it.

What Else Can I Make?

As well as cabbage sauerkraut, you can experiment with other vegetables to make different flavoured sauerkraut – celery and dill, beetroot and juniper, ginger and carrot… the possibilities are endless.

You can also make kimchi to accompany Asian dishes, or try kombucha – a fizzy black tea. Ideal for preserving pickles and chutneys, too, it can also be used to make kefir or hold your sourdough starter.

What is Fermentation?

Fermentation is one of the oldest techniques for preserving and storing food. When you combine your vegetables with salt and store them in an airtight container, the naturally present beneficial bacteria transform your food into a natural probiotic.

"Just what I need"

I have started making my own kefir and this jar is the perfect size for my needs plus it has a nice wide neck, making it easy to sieve mixture into it May I also review the clingfilm dispenser I bought a few weeks. I assumed it would be similar to the previous one purchased from you many moons ago. It couldn’t be more different . It’s so difficult to use. The cling film is sliced off so close to edge of box that it is very difficult to stop it retreating back inside, making each use a major operation. Even worse when other family members use it and leave it in a bad way. I’m so disappointed

Great jar for making sourdough but unfortunately jar exploded. I feel the glass is not thick enough for the purpose or maybe the jar was faulty. Is it possible to get a replacement jar as top is still intact.

Does what it says - sturdy & good quality. Easier to use than a clip top jar. Only snag is cleaning lid by vent if you swill contents too vigorously rather than stir! I put glass jar in dishwasher, but not lid.

Been using these for Kimchi for two years. Works every time and I have a jar on the go almost every day. I started with the recipe on the back of the label but have made a few variants to suit my tastes. I recommend using Sriracha. I use the glass pebbles also sold by Lakeland.

Added the fermentation jar to a bowl of very hot water to warm up content. Seconds later: CRACK!!!! The entire bottom had cracked out in one large piece. Luckily I was able to save about half my sourdough (an irreplaceable heritage ferment). But the 1.8l jar is no more. I am gutted, as Lakeland no longer sell that size. >> As fermentation, pickling etc go hand in hand with sterilisation, the hot water problem *should be mentioned in the product information* << Or better: produce from jam jar glass. Ordinary jam jars do better than this with hot water
