How the Weck Method Works
The Weck method is based on two principles: most micro-organisms cannot survive extended exposure to heat and if air is expelled from around the food to create a vacuum, an airtight seal is created that prevents micro-organisms re-entering. All you need to do is follow these 3 easy steps.
1. Fill the clean jar to the brim with food, place the clean rubber seal and lid on top and apply a metal clip to each side.
2. Heat the jar – usually within a water bath – steam will escape as the food heats and expands, driving out any excess air. Please note: a little liquid may escape under the rubber seal along with the steam created by heating the jar but, please rest assured, air cannot get in as the steam goes out.
3. The clips can be removed – the vacuum-seal will hold the lid tightly onto its rubber ring until you stretch the rubber to break the seal and open the jar. The food inside will stay fresh for months, or until you open the jar.
To open, pull the tab on the rubber ring until you hear a soft hiss of air entering the jar, refrigerate, and you can use the clips again to seal the jar until you’ve eaten all the contents.
The History of the Weck Method
Invented over 150 years ago, as an improvement to conventional canning, the principle of preserving hot food by sealing it into a glass jar has been a speciality of the Weck brand since 1900. Johann Weck was a teetotal vegetarian, who needed a way to preserve the harvest from his garden and the fruitful orchards of the Baden area, that could be done at home using no alcohol. He was overjoyed to find this glass-enclosed sterilizing method, bought the patent and went into partnership with another businessman who soon developed export markets around the world as well as developing a pioneering method of education for schools, colleges and community centres that assisted in promoting the brand.
