Originating in Scandinavia, Krumkake waffles are slightly spiced pancakes or very thin cookies – traditionally served rolled into tubes or cones and filled with whipped cream and cloudberry jam. They also make delicious ice cream cones, and are a brilliant accompaniment for desserts and breakfast yoghurt too. Fancy a giant brandy snap anyone?
How the Krumkake Roller Works
Roll the still-warm, patterned waffle or other recipe round the wooden krumkake roller to create a cone or tube, and set it aside to cool. There’s a helpful clip to keep hold of one edge while you roll the delicate pancake so it’s really simple and quick to do and, because it’s easy to make a big batch all together, you can just pop them into an airtight tin until the sun comes out and everyone wants an ice cream.
