What is Pectin?

Pectin is a natural ingredient derived from the fibre found in the skin of certain fruits. Apples, for example, are naturally high in pectin, which is why they are very firm. Pectin is also found in the rinds, seeds and membranes of citrus fruits.

Consistent, Tastier Results

In preserves, pectin works as a thickening agent, helping your jams thicken up quicker and reducing the boiling time required to offer more consistent results and fruitier tasting jams and jellies. This mix contains just the right amount for perfect results every time.

Ideal for batch-making preserves using home-grown or shop-bought fruit, this mix makes up to 22 x 240ml jars of jam. It includes instructions for no sugar, low sugar, no-calorie sugar substitutes and honey to make 1-10 jars of jam per batch, and is suitable for vegetarians and vegans. It’s also gluten free.

"Works....but"

I use some form of pectin for marmalade, usually a liquid brand that most grocers stock, which is pricey but reliable. I was curious to try this as it would be much cheaper. Alas, the instructions and recipes (including online) are all for quick jams and freezer jams, not traditional jam and no mention of marmalade at all. I found 5 to 6 tsp added to a recipe using 2lb oranges and boiled to setting point at 105°C to be about right, but it was a case of trial and error and some batches are perhaps a little over stiff! I will, however, continue experimenting but perhaps with a different brand.

This never fails to make perfect jam in my jam maker. It’s easy to use and keeps well. Unfortunately, the availability of Sugar Reduced Pectin for jam is no longer available and as that was my preferred jam, it’s a pity.

"Works well in Bread makers"

Had read this worked well in Bread machines, so decided to give it a go. Previous attempts using sugar and pectin still left the jam a bit too runny, follow the recommended dose and the jams comes out lovely. If making the traditional way then this is not something I would use, but for small batches in a bread maker it is perfect. Would recommend
