Citrusy, spiced and oh so nice

The lovely folk at Ginger Bakers have given the traditional fruitcake a citrusy boost by adding tangy orange and lemon peel to their divine bake, along with a dash of orange oil for good measure. So far so yum. And it goes without saying that you can look forward to all the flavours we love simnel cake for, like plump sultanas, raisins and cherries, aromatic mixed spices and a generous tot of brandy or two. In another twist on a springtime tradition, this little fruit-filled cake is topped with dainty marzipan flowers instead of balls, so it’ll look the part if you save it for a special Easter afternoon tea.

Back in 2006, Lisa Smith began baking cakes in her own kitchen, supplying local cafes and selling them at farmers markets. Her gorgeous cakes caught on, and before she knew it, she’d outgrown her kitchen. Nowadays, Lisa and her multi-award-winning team create wonderful cakes in a purpose-built bakery, just outside Kendal, the gateway to the Lakes.
