""Home made" Christmas cake."

Have had this cake mix before and been very happy with it so I'm hoping that the Lovely recipe hasn't changed.

I haven't tasted the cake yet but it smells lovely.I used a smaller tin (7") and slower oven 120 fan and was very pleased with the result.

"Good base mix for a Christmas Cake"

star star star star star_border

Having read the previous reviews I was careful to use very soft butter and a stand mixer to do the creaming. The dried fruit was very dry I soaked it in 50ml brandy + 50ml orange juice.. This plumped the fruit. I added 2 Tbs. of black treacle to the mix for colour & flavour. So I only needed one egg to achieve the desire consistency. It is still a bit paler than a tradiotional Christmas cake and a more cakey texture, but it smells lovely and I am sure it will fit the bill at a very reasonable price. Note to Lakeland:: Nowhere in the instructions is 150ml of water mentioned!

Came out well, felt the first mixing instruction was a bit hard to follow, as to mix in the butter was very difficult, and to reach a creamy consistency needed a very long time to cream. otherwise much as stated.
