For your delectation, in this kit from The Spicery you’ll find all the spice blends you need to make two authentic Indian thali feasts – one from northern India and one from southern India – for two people. And as every dish is vegan (although they can be adapted to add meat if you want), they can be enjoyed by everyone who loves Indian food.

North V south
Northern thalis are usually heartier and tend to involve more starchy root vegetables, while southern thalis are lighter and often include coconut – both are generally served with rice and chapatis or popadoms, and, of course, are equally tasty. From the north we have a rich mixed veg curry accompanied by spinach-based saag aloo, a fresh tomato salad and tangy tamarind chutney. And from the south, a vibrant tomato-based thakkali curry served with dhal, coconut chutney and kosambari – an Indian take on coleslaw.
