Black garlic doesn’t happen overnight. It takes around 40 days to produce the sweetly sticky, date-like results that end up in each jar. White garlic bulbs are expertly heat-aged over a period of weeks to break down the enzymes that give fresh garlic its sharpness, changing its colour, taste and texture, to create a slightly balsamic, sweet flavour sensation that will become your go-to accompaniment for so many dishes.
