Attractive lotus root slices
Prettily perforated with holes in a distinctive ‘snowflake’ pattern, every slim slice of lotus root adds immediate interest to drinks. Slot a slice over the rim; float one on top of ice or foam; position one or more against the inside of a glass… each thin slice with its subtly different, unique pattern adds real ‘wow’ and makes your cocktails stand out from the crowd.
In hibiscus and ginger syrup
The brilliant red syrup combines the bright colour and rhubarb/raspberry flavour of wild hibiscus flowers with the earthy, fiery tang of ginger, so just a few drops adds a swirl of intense colour and a sweet and sour kick when added to your drinks. You can also use the syrup to colour red cocktails or sauces – the colour is heat-stable so it retains its pure, clear red colour without fading to brown.

What is lotus root?
Made from the underground stems of the lotus flower, lotus root is a popular ingredient in Far Eastern cuisine. Incredibly versatile, with a crunchy texture and slightly sweet, tangy flavour, it’s commonly treated as a vegetable in Chinese and Japanese cooking – traditionally deep-fried, stir-fried, cooked in soup, served in salads, soaked in syrup or pickled in vinegar – and used to make lotus root tea in Korea.
… and why is it full of holes?
Lotus stems spend their lives constantly submerged in water and mud, so the holes get air from above the water surface down to the rest of the plant, and help it to ‘breathe’. Every stem has the same distinctive pattern but, because the holes grow as part of the plant, every slice of lotus root is uniquely different – just like a snowflake.
