    Prettily perforated with holes in a distinctive ‘snowflake’ pattern, every slim slice of lotus root adds immediate interest to drinks. Slot a slice over the rim; float one on top of ice or foam; position one or more against the inside of a glass… each thin slice with its subtly different, unique pattern adds real ‘wow’ and makes your cocktails stand out from the crowd.

    Colour-changing blue syrup

    Flavoured with elderflower and coloured with butterfly pea flowers, the brilliant blue syrup works in just the same way as b’Lure Colour Change Cocktail Concentrate – just a few drops added to clear drinks will turn them a lovely shade of blue. And that’s not all – squeeze in lime or lemon or add some tonic water, and before your very eyes your drink will slowly change colour to purple and then pink.

    What is lotus root?

    Made from the underground stems of the lotus flower, lotus root is a popular ingredient in Far Eastern cuisine. Incredibly versatile, with a crunchy texture and slightly sweet, tangy flavour, it’s commonly treated as a vegetable in Chinese and Japanese cooking – traditionally deep-fried, stir-fried, cooked in soup, served in salads, soaked in syrup or pickled in vinegar – and used to make lotus root tea in Korea.

    … and why is it full of holes?

    Lotus stems spend their lives constantly submerged in water and mud, so the holes get air from above the water surface down to the rest of the plant, and help it to ‘breathe’. Every stem has the same distinctive pattern but, because the holes grow as part of the plant, every slice of lotus root is uniquely different – just like a snowflake.

    About butterfly pea flowers

    An edible blue food is quite rare in nature, but the butterfly pea flower has been used as a 100% natural food colour in Thailand (where it grows) for many years. The flowers are usually dried and used as a herbal ingredient in many foods including rice, desserts and drinks – and it’s a key ingredient in nam doc anchan, a special tea mixed with honey and lemon and served over ice as a welcome drink to travellers.
