Cambodia
Cambodian Saraman Beef with Kampot Pepper Sauce – Seasoned with lime and fabulous Kampot black peppercorns, this complex curry is similar to a Thai massaman curry – rich and dark with lots of aromatic spices. The historical origin of the recipe is the same: Muslim traders travelled to the region from India, bringing dried spices that were then mixed with fresh local ingredients such as lemongrass and kaffir lime to make the dish. The Spicery have added a fantastic Kampot pepper sauce to bring extra zing and heat.

Vietnam
Vietnamese Five Spice Chicken with Herb Salad – Created by the Spicery’s resident Vietnamese expert, Tung, this is his dad’s version of a sweet and aromatic chicken stew known in Vietnam as thit ga sot vang. Heavily flavoured with Chinese five spice and ginger, it’s served with a zingy fresh herb salad and crunchy, caramelised peanuts. Tung suggests using a traditional French baguette to mop up all the fragrant juices – a legacy of Vietnam’s history as a colony of France.

Thailand
Thai Red Chicken Curry with Nam Prik – A classic Thai red curry made with chicken and potatoes, it has a heady fragrance of kaffir lime leaves, lemongrass, cassia and ginger. It’s served with Thailand’s favourite seasoning Nam Prik – a blend of fish sauce, lime juice and chilli – you can choose how hot to make it, so if you and your friends love a hot chilli kick, you can add all the chillies!

Bali
Balinese Roast Pork with Coconut Sauce – In Bali, this much-loved roast pork dish is known as babi guling, a whole roast pig cooked for ceremonial occasions and feeding up to 100 people… This scaled-down version is made with seasoned pork belly and served with a spicy coconut sauce that’s made from a paste called base gede – a blend of lemongrass, galangal, turmeric and tamarind, with shrimp powder for an umami hit.
