Country Fare Cumberland Rum Nicky Fruit Cake 700g

In the late 18th century the ports of northern Cumberland were very important centres of trade, renowned for the importation of sugar, spices and rum. Inspired by these flavours and named after a traditional regional tea-time treat, Country Fare’s Cumberland Rum Nicky Fruit Cake is a moist, rum-infused cake with a hint of ginger, beautifully topped with nuts and a large slice of crystallised orange.
It’s a real treat served after dinner with mature cheeses like cheddar – in the proper tradition of northern ‘suppers’ – but it’s also delightful with a cup of afternoon tea, even if you don’t take your brew strong enough to stand a spoon up in, like so many local farmers do.
The History of The Cumberland Rum Nicky
Often seen in Cumbrian farmhouses and bakeries as some sort of variation on a pastry slice or lattice-topped tart, the origins of a Cumberland Rum Nicky are lost in the mists of time – there’s even a suggestion that its name comes from illicitly traded goods, ‘liberated’ from the rum importers in Whitehaven – but every recipe agrees on two things, it should be moist and chewy, and it should have lots of rum!

Based in the picturesque valley of Mallerstang, near Kirkby Stephen, Dianne Halliday has converted a barn in the grounds of her working sheep farm into a real cottage industry.
