Country Fare’s bakers have given a modern twist to a much-loved old family recipe, soaking dried fruit overnight in a generous amount of French brandy to produce the plumpest possible result and then baking in the almond paste centre before topping with more almond paste and sugar flowers instead of the more traditional orbs. Based in the picturesque valley of Mallerstang, near Kirkby Stephen, Dianne Halliday has converted a barn in the grounds of her working sheep farm into a real cottage industry. Following traditional family recipes, Dianne and her team of expert bakers insist on using fresh eggs from the nearby village of Carrlingill, and the finest flour from Carrs' mill in Silloth ... and you can really taste the difference in their cakes.
