This wonderfully fresh, delicately pine-scented syrup is made by carefully cutting and infusing the fresh spring growth of the Douglas Fir, a process which releases its fragrant oils. It makes an unusual and delicious cocktail ingredient, and goes particularly well with gin – think a Douglas Fir Gimlet – or vodka; how about a Spruce Martini? It’s also wonderful mixed with soda or tonic. Aside from drinks, it works well in decadent chocolate desserts or as a glaze for chicken, pheasant or grouse. I bought this on impulse in the Trafford Centre store and have used it in drinks ( soft and alcoholic ! ) as well as added it to fruit syrups for desert and over roasting pork. The syrup adds an extra layer of flavour and is a great store cupboard item which I plan to use in a myriad of dishes. I am pleased with my impulse buy, it is something a little different and I can highly recommend it.
I bought a bottle of the Douglas Fir Syrup at the Lakeland store in Meadowhall, Sheffield. I was pleased to find this new product as I'd noticed lately how versatile this type of syrup can be, either in drinks or in preparing food. It goes well with ice cream or with yoghurt in a sorbet. The tangy, almost citrus-like taste works well with gin and vodka, and is also a great accompaniment to whisky with ice or soda. I highly recommend this product.
I like flavouring syrups and use them in cooking, as well as for drinks both with alcohol and without. As has been said by anther reviewer, they are great store cupboard items. I was very disappointed to find that, according to the label, this only has a 14 day life once opened. I plan to try freezing some to see of this extends its useful life.
