Based on an American pickle recipe from the Great Depression, this version has an Asian-inspired twist with cinnamon and star anise to accompanying the sliced cucumber and shallots in their sweet and sour spiced marinade. Try it with cheese, pies and cold cuts.
For a quick and easy canapé, make a smoked salmon blini and finish with a garnish of pickle or for a cheat’s raita - drain the juice from the cucumbers, then mix into some natural yoghurt.
