Each durable, hand-finished serving board has a unique grain and is lovingly hand tied with a "Scottish Oak" branded ribbon and swing tag. The timber is harvested for Just Slate by Scottish Wood, a dynamic not-for-profit organisation who are dedicated to ensuring the future of Scottish woodlands, particularly in the Kingdom of Fife, improving the environment and rural access, and boosting local economies by encouraging artisan trades. They also support the woodwork departments of schools in Fife, so that pupils can gain skills and experience working with native hardwood timber.

Famously strong, heavy and durable, oak (or Quercus, to give it its Latin name) is revered in British culture because of its associations with longevity, steadfastness and toughness. A deciduous hardwood, it is naturally quite pale in colour with a prominent grain and, although it’s renowned for construction in houses and boat-building, its anti-fungal properties make it ideal for use in our kitchens and dining rooms.
(The natural anti-bacterial properties of hardwood cutting surfaces have been proven after extensive testing in American university research labs, notably Dean O. Cliver and his team at the Food Research Institute of Wisconsin-Madison University.) It’s recommended that wooden boards should be stacked on their long sides, especially when drying, so that any residual damp cannot ‘track’ up the grain and cause expansion which may eventually encourage the board to split.
